Dixie Fried Chicken

1 (3 lb) chicken, cut up
1/2 t salt
1/8 t pepper
2 c flour
1 t red pepper
1 egg, beaten
1/2 c milk
Vegetable oil

Season chicken with salt and pepper. Combine flour and red pepper and set aside. Combine egg and milk. Dip chicken in egg mixture and then in flour mixture, coating well.

Heat 1" of oil in a skillet to 350 degrees. Place chicken into skillet. Cover and cook chicken over medium heat 20 to 25 minutes or till golden, turning once. Drain chicken on paper towels.

Time: 40 minutes   Serves: 4
