1/4 c olive oil
1/2 c finely chopped onion
1/2 to 1 t crushed red pepper
3 garlic cloves, minced
1 1/2 lbs medium shrimp, peeled and deveined
1/2 c diced tomatoes, drained in a colander for 5 minutes
2/3 c coarsely grated feta cheese
1/4 c chopped flat leaf parsley
Preheat oven to 400 degrees. In a large skillet, heat the oil and saute the onion over medium heat for 5 minutes or till soft. Add the pepper and garlic and saute for 30 seconds. Add the shrimp and saute for 2 minutes or till they become firm. Add the tomato and salt and cook for 2 minutes more till the sauce begins to thicken. Transfer to a small baking dish. Bake for 10 minutes or till sauce is bubbly. Sprinkle with cheese and bake for 2 minutes more. Sprinkle with parsley and serve.
