|3.5 lbs plum or roma tomatoes, halved
1 c olive oil
4 cloves garlic, minced
2 T Italian seasoning
1 t crushed red pepper
1 t sea salt
1/2 t black pepper
1 lb fettuccine
Preheat oven to 400°F. Place tomato halves (cut-sides up) on a 15x10x1-inch pan. Mix the olive oil, spices and garlic together in a small bowl. Spoon over tomatoes.
Roast 1 hour till tomatoes are soft and browned on top.
Prepare pasta as directed on package. Drain well. Place tomatoes in a large bowl and coarsely mash them. Add pasta and toss to mix well. Sprinkle with shredded Parmesan or Romano cheese.
