1 lb ground beef
1 can (15 oz) pinto beans, rinsed and drained
1 can (15 oz) enchilada sauce
1 1/2 cups (6 oz) shredded cheddar cheese, plus additional for the top of the dish
1 can (4 oz) chopped green chilies, undrained
1 1/2 cups crushed tortilla chips
1 T dried minced onion
8 oz sour cream
Cooked white rice
In a skillet over medium heat, cook ground beef and minced onion. Drain. In a large bowl, combine the remaining ingredients except for the rice. Pour into a microwave safe dish. Sprinkle remaining cheese on top. Microwave for 8-10 minutes. Serve on top of white rice.

This makes a great warm dish when time is limited.
