1 1/2 c warm water (105-115 degrees)
1 t active dry yeast (half of a 1/4 oz packet)
3 c flour
1 c cake flour
1 T sea salt
Combine water and yeast and proof till foamy (5-8 minutes). Mix flours and salt in a mixer bowl fitted with a dough hook. Add the yeast mixture to the flour mixture and knead on low for 30 minutes. Shape the dough into a ball and placed in a lightly oiled bowl, turning the dough to coat with oil.
Cover the bowl and let rise in a warm place for 4 hours. Punch down the dough and divide into 4 pieces. Shape the pieces into balls. Brush the balls lightly with oil, cover completely with plastic wrap and let rise another 2-4 hours.
Shape the dough into pizza rounds.
