Spicy Black Bean Burgers - GF

 

2 (15 oz) cans of black beans, drained and rinsed

1/2 small red onion, chopped

1/2 c green bell pepper, chopped

1/2 c finely crushed tortilla chips

1/2 c chopped cilantro

1 T chili powder

1 t cumin

1/2 t red pepper flakes

2 t oil

 

Mash the beans in a large bowl. Add the onion, bell pepper, tortillas, cilantro, chili powder, cumin and red pepper and mix well. Shape into 4 one-inch thick patties. Heat the oil in a large skillet over medium heat and cook the burgers till crisp on the outside, approximately 2-4 minutes per side. Serve with your favorite salsa.

 

Time: 30 minutes   Serves: 4

I love burgers. These are great when you want something different and spicy. They also work well if you have vegetarian guests.
