Banana Nut Pancakes
Syrup:
1/2 c corn syrup
1/2 c water
1/2 c granulated sugar
1/4 t banana extract or flavoring

Pancakes:
1-1/4 c all-purpose flour
1-1/2 c buttermilk
1 large egg
1/4 c vegetable oil
2 T granulated sugar
1 t baking powder
1 t baking soda
1/2 T banana extract or flavoring
1/4 t salt
2/3 c chopped pecans
1 ripe banana

Make the syrup by combining all syrup ingredients (except banana extract) in small pan and heat on high, stirring occasionally. When the mixture begins to boil, remove from heat. Stir in the banana extract.

In large bowl, combine all ingredients for pancakes except pecans & banana. Use an electric mixer to blend until smooth. Heat large frying pan or griddle over medium heat. Coat pan with butter or nonstick spray when hot. Pour 1/4 c amounts of batter into pan. Batter should spread to about 4" diameter. Sprinkle about 1/2 T pecans in center of each pancake, immediately after pouring batter in pan. Cook pancakes for 1-2 minutes per side or until golden brown. Slice banana, serve on top of stack of pancakes. Sprinkle pecans on top.

Time: 30 minutes   Serves: 4

These pancakes are similar to IHOP's!
