Jelly Bean Biscotti

13 oz jelly beans
3 c flour
2 t baking powder
1/2 t salt
4 T unsalted butter at room temperature
4 large eggs
1 c granulated sugar
2 t vanilla
1/4 c sanding sugar

Preheat oven to 350 degrees. In a medium bowl cream butter and granulated sugar on medium speed till light and fluffy. Add 3 eggs one at a time, beating in between. Add the vanilla. Add the baking powder, salt and flour. Mix just till combined. Stir in the jelly beans.

Put the dough on a floured sourface. Dust your hands with flour and sprinkle flour on top of the dough. Cut the dough in half. Roll each half into a log and place on parchment paper lined cookie sheets. Flatten the logs with your hands and brush a beaten egg on the surface of the dough. Sprinkle with sanding sugar. Bake for 25 minutes or till golden. Cool for 15 minutes or till you can handle them. When cool enough, slice the logs diagonally in 3/4" slices. Place back on cookie sheet and bake for another 10-12 minutes till golden. Cool on wire racks.
