Mincemeat Cookies

1/2 c shortening
1 c sugar
2 eggs
2 T heavy cream
1 t vanilla
2 1/2 c flour
1/4 t baking soda
1/2 t salt
1 jar of mincemeat filling

Mix together thoroughly:
1/2 c shortening
1 c sugar
2 eggs

Stir in:
2 T heavy cream
1 t vanilla

Sift and stir in:
2 1/2 c flour
1/4 t baking soda
1/2 t salt

Chill dough for 2-4 hours. Preheat oven to 400 degrees. Roll dough thin (1/16"). Cut 3 " rounds. Place on lightly greased cookie sheet. Place round teaspoonfuls of mincemeat in center of round. Place another 3" round on top of filling. Press edges together with a fork. Bake until lightly brown, about 8-10 minutes.

Time: 4 hours   Makes: 6 dozen

These were one of my grandfather's favorites.
