Oatmeal Butterscotch Cookies

3/4 c butter, softened
3/4 c sugar
3/4 c brown sugar
2 eggs
1 t vanilla
1 1/4 c flour
1 t baking soda
1 t cinnamon
1/2 t salt
3 c rolled oats
1 package butterscotch chips

Preheat oven to 350 degrees. In a large bowl beat the butter, sugar and brown sugar. Add the eggs and vanilla and beat well. Stir together the flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture and stir till blended. Stir in the oats and butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake 8-10 minutes till the edges begin to brown. Cool on wire racks.

Time: 1 hour   Makes: 4 dozen


I first had these cookies the night before I got married at the bed and breakfast we stayed at. They were so delicious, I had to get the recipe.
