14 oz can of sweetened condensed milk
1 T peppermint extract
6 c powdered sugar
Additional powdered sugar
1 1/2 lbs chocolate candy coating (available at gourmet and craft stores)
In a large mixing bowl, combine the sweetened condensed milk and extract. Add 6 c powdered sugar and beat on low speed till smooth and well blended. Put mixture onto surface sprinkled with powdered sugar. Knead lightly to form a smooth ball. Shape into 1" balls. Place 2" apart on wax papaer-lined baking sheets. Let dry 1 hour. Turn over and dry another hour. Melt the chocolate. With a fork, dip each patty into the melted chocolate. Place onto the wax paper-lined baking sheets and let stand till firm. Store at room temperature or in the refrigerator.

You can add food coloring to the mix if you want the peppermint patties to have a festive color inside. You could also form the balls into different shapes, like hearts for Valentine's Day. This recipe came from Treasury of Christmas by Publications International LTD.
