Buckwheat Pancakes - GF
1 c buckwheat flour
1 t baking powder
2 T sugar
1/2 t salt
1 egg, beaten
1 c milk
2 T melted butter

Preheat griddle or large skillet. Grease lightly with oil. Griddle is ready when small drops of water sizzle and disappear almost immediately. Mix dry ingredients together; add egg, milk and butter, beating well after each addition. Pour 1/4 c batter for each pancake onto hot griddle. Cook 1 to 1½ minutes, turning when edges look cooked and bubbles begin to break on the surface. Continue to cook 1 to 1½ minutes or until golden brown.

Time: 20 minutes

Serves: 4

Being gluten free, one of the things that I miss most is good pancakes. That was until I realized that buckwheat flour doesn't contain gluten. These are now my favorite light and fluffy pancakes.
