Cracker Barrel Hash Brown Casserole

10.25 oz cream of chicken soup
8 oz Colby cheese, shredded
1/2 c butter, melted
1 small onion, minced
1 t salt
1/2 t pepper
2 lbs frozen shredded hashbrowns

Preheat oven to 350. Spray a 9x13 pan with cooking spray. In a bowl, mix the first six ingredients. Add hashbrowns and toss. Put mixture in prepared baking pan and bake 35-40 minutes or till browned.
