1 stick unslated butter at room temperature
1/2 c sugar
2 egg yolks
1 1/2 t vanilla extract
1 1/4 c gluten free baking mix
1/8 t salt
1 c confectioner's sugar
3-4 T heavy cream
Preheat oven to 350. Fluff butter in a mixer. Add sugar and beat well. Add one egg yolk at a time till incorporated. Mix in the vanilla. Add baking mix and salt and mix.
Divide dough into 10 equal balls. Place the balls 3" apart on parchment-lined baking sheets. Bake 12 minutes or till edges are crisp. Cool on baking sheets.
Mix the confectioner's sugar and the heavy cream to make the icing. Spread on cooled cookies. Sprinkle colored sugar on half of each cookie.

I first made these for a potluck supper. They were an overwhelming hit! These are very versatile because you can use them for any holiday just by changing the color of the sugar. This is a Country Living recipe.
