12 oz Italian sausage
2 T olive oil
1.5 lbs broccoli rabe, cut into 2-3" pieces
8 oz cavatelli pasta
4 garlic cloves, chopped
Cook the sausage and 1/2 c water in a large skillet with lid over medium heat for 10 minutes. Remove the sausage and slice into 1/3" pieces. Heat the olive oil in the same skillet and fry the sausage on both sides till brown (about 3 minutes per side). Transfer the sausage to a plate. Leave oil in skillet.
Boil a large pot of salted water. When the water boils, add the broccoli rabe and cook till wilted (1-2 minutes). Using a slotted spoon, transfer rabe to a colander. Reboil the water and cook the cavatelli according to package instructions.
Heat skillet to medium-high and add the rabe and garlic. Cook for 4 minutes. Add sausage and reduce to low.
Strain the cavatelli, reserving 1/2 c of the water. Put reserved water in the skillet and scrape the brown bits from the bottom of the skillet. Add the cavatelli and toss. Add parmesan.
Time: 45 minutes Serves: 4-6
This is a warm, fulfilling meal. It is really an adult meal. I haven't meet too many kids that would eat rabe. It tastes even better the next day.
