Ham and Cheese Crepes
2 eggs
1 egg yolk
1 2/3 c flour, sifted
Salt to taste
2 c warm milk
3 T butter
7 oz sliced ham
9 oz fontina cheese, sliced

Preheat oven to 450. Beat eggs in a medium bowl. Add flour and salt and whisk. Add milk and mix.

Melt 1/2 T butter in a frying or crepe pan. Add a ladle of batter to the pan. Turn the pan to fully coat the bottom of the pan. Flip the crepe when batter is dry. Continue making crepes (adding butter to pan when needed) in this fashion till the batter is gone. When all the crepes are made, add a piece of ham and cheese to each crepe and roll. Place crepes in a buttered baking dish. Cover crepes with remaining cheese. Place in oven till cheese melts and the crepe edges are browned.

Time: 40 minutes   Serves: 4-5
