Redneck Stew -GF

2 T vegetable oil
2.5 lbs beef stew meat
1 large onion, chopped
2 cloves garlic, chopped
4 carrots, cut into 1" slices
2 c beef stock
1 (14.5 oz) can crushed tomatoes
1 can (4 oz) diced green chiles, drained
1 t Worchestershire sauce
1 t salt
1/4 - 1/2 t cayenne pepper
Black pepper to taste
2 cans (15 oz each) pinto beans, rinsed and drained
2 T cornstarch

In a large Dutch oven, warm the oil over medium heat. Add the beef, onion and garlic and saute for 10 minutes. Add the remaining ingredients except the beans and reduce heat to medium-low. Cover and simmer for 30 minutes. Add the beans and simmer, covered, for 1 more hour. Combine the cornstarch and 1/2 c water in a small bowl. Add cornstarch mixture to stew and stir. Serve.

Time: 2 hours   Serves: 6-8

My husband requested beef stew. I am not very found of brothly stews. This tomato-based creation hit the spot.
