Rustic Clam Chowder
5 medium new potatoes, cubed
1 celery stalk, diced
2 carrots, chopped
1 medium yellow onion, chopped
1 c water
2 (10 oz) cans whole clams (drain juice and reserve)
1 T flour
1 t salt
3/4 t black pepper
1 1/2 c heavy cream
1 1/2 c whole milk
5 slices bacon, cooked and crumbled

In a 4-qt pot over medium heat, combine the potatoes, celery, carrots, onion, water and clam juice. Bring to a boil. Reduce heat and simmer, covered for 15 minutes (or till potatoes are soft). Sprinkle with flour, salt and pepper. Blend. Add the clams, cream, milk and bacon. Simmer, uncovered for 10-15 minutes.

Time: 45 minutes   Serves: 6-8

If you have never had homemade clam chowder, you HAVE to try this recipe. I have been eating clam chowder all of my life and this is definitely the best I have ever had. Two thumbs up!
