Chile Rellenos Casserole
1 lb ground beef
1/2 c chopped onion
1/2 tsp salt
1/4 tsp pepper
2 (4 oz) cans green chiles
21/2 c shredded cheese
1 1/2 c milk
3 T flour
1/2 tsp salt
Pepper to taste
4 beaten eggs
Tabasco to taste

 

Brown beef, onion, salt and pepper and drain the fat. Spread 1 can of chiles in a 9x13 " baking dish. Sprinkle with half the cheese, then meat, then the other can of chiles and top with remaining cheese. Combine remaining ingredients, whisk until smooth. Pour over cheese. Bake at 350 degrees for 50 minutes. To brown, broil for a few minutes. Cool 5 minutes before serving.

Time :90 minutes   Serves: 8-10

This can be eaten anytime of day and the casserole freezes well.
