Blueberry Corn Muffins

5 T butter melted, plus extra to grease pan
1 1/2 c flour
2 1/2 t baking powder
3/4 t salt
1 c yellow cornmeal
1 c sugar
1 c milk
1 egg
1 c blueberries

Preheat oven to 400 degrees. Grease muffin pan with butter. Sift flour, baking powder and salt into a large bowl. Add cornmeal and 2/3 c sugar and whisk till mixed. Set aside. In a small bowl, combine the milk and egg and blend. Add the wet ingredients to the dry ingredients just till moistened. Don't overmix. Gently fold in the blueberries. Spoon the batter into the muffin pan. Sprinkle the muffin tops with the remaining 1/3 c sugar. Bake 20-24 minutes till golden. Loosen muffins with a toothpick and cool on wire rack.

Time: 40 minutes   Makes: 12

I turn to these muffins when I want something lower carb.
