Black Bean Pumpkin Chili - GF

1 medium onion, chopped
1 medium sweet yellow pepper, chopped
2 T olive oil
3 garlic cloves, minced
3 c Progresso ® Chicken Broth
2 cans (15 oz each) black beans, rinsed and drained
2 1/2 c cubed cooked turkey (turkey cutlets, diced)
1 can (15 oz) solid-pack pumpkin
1 can (14 1/2 oz) diced tomatoes, undrained
2 t dried parsley flakes
2 t chili powder
1 1/2 t dried oregano
1 1/2 t ground cumin
1/2 t salt
 

In a large skillet, saute the onion, yellow pepper in oil until tender. Add garlic; cook 1 minute longer. Transfer to a 5-qt. slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through. Yield: 10 servings (2-1/2 quarts).

Time: 4.5 hours   Serves:8-10

This is a good way to sneak in pumpkin. The kids didn't even know there was any in there.
