Crockpot Sweet Potato Casserole
3 (29 oz) cans sweet potatoes, drained and mashed
1/2 c butter, melted
3 T white sugar
3 T brown sugar
1.5 T orange juice
3 eggs, beaten
3/4 c milk
1/2 c chopped pecans
1/2 c brown sugar
3 T all-purpose flour
1 T butter, melted
 
Lightly grease a slow cooker. In a large bowl, blend sweet potatoes, 1/2 c butter, white sugar and 3 T brown sugar. Beat in orange juice, eggs and milk. Transfer this mixture to the prepared casserole dish.
In a small bowl, combine pecans, 1/3 cup brown sugar, flour and 2 tablespoons butter. Spread the mixture over the sweet potatoes. Cover the slow cooker and cook on High for 4 hours.

Time: 4.5 hours Serves: 12-16

This is great for a potluck where you have no access to a stove.
