Butterscotch Cashew Blondies
1 ½ c packed dark brown sugar
¾ c butter
2 eggs
1 T vanilla
2 ½ c all-purpose flour
2 t baking powder
½ t salt
1 ½ c butterscotch chips
1 c caramel bits
1 c toffee pieces
1 c lightly salted cashews

Preheat oven to 350 degrees. Butter a 9-by-13" baking pan. Line bottom of pan with parchment paper; butter and flour parchment paper.
In a saucepan over medium heat, combine the butter and brown sugar and cook till the butter melts. Remove from heat. Add eggs one at a time and stir thoroughly. Add vanilla. Stir in the flour, baking powder and salt till just combined. Add the butterscotch chips, caramel bits, toffee and cashews. Stir till combined and spread the batter evenly into prepared pan.
Bake for 25-30 minutes till golden. Cool completely on wire rack and cut into bars. Store at room temperature for 3 days or freeze for up to 3 months.
