Sunday Soup - GF

1 c onion, chopped
4 cloves garlic, chopped
8 c chicken stock
1 (28 oz) diced tomatoes with juice
1 (4 oz) green chiles, undrained
2 T parsley or cilantro, chopped
1 t cumin
1 t sugar
1/2 t chili powder
1 t salt
Black pepper to taste
2 limes, juiced
4 chicken breasts, cooked and shredded

Optional toppings:
Shredded cheese
Tortilla chips, crushed
Avocado
Sour cream

In a large soup pot over high heat, combine all of the ingredients except chicken and toppings. Bring to a boil. Reduce heat to medium-low and simmer uncovered for 20 minutes. Add chicken and cook till flavors are blended, about 10 minutes. Serve with toppings.

Time: 1 hour   Serves: 6

I make this soup a day before I want to serve it. As with most soups/stews, this tastes a lot better the next day. This is an adapted recipe from The Big Book of Soups & Stews by Maryana Vollstedt.
