Sweet Eats
Steak Chimichurri- GF
2 c cilantro
2 c parsley
1/2 c olive oil
3 T dry red wine
3 T fresh lime juice
1 T balsamic vinegar
2 jalapeños, roasted and peeled
1 clove garlic
Salt
Freshly ground pepper
5 lbs skirt steak
 
In a blender, blend first 8 ingredients plus 2 tablespoons water. Season with salt.
Heat grill to high. Season steaks with salt and pepper. Grill to desired doneness, about 4 minutes per side for medium-rare and 6 for medium. Let rest for 10 minute. Serve with sauce.
 
Time: 30 minutes   Serves: 10
 
This is a Country Living recipe. I add whatever wine I have available and it turns out great. I serve this with a goat cheese tart.
