Cornbread GF

4 T unsalted butter, melted
2 eggs
4 T honey
1 3/4 c sour cream
2 c yellow cornmeal
1 t kosher salt
1 t baking soda
2 t baking powder

Preheat oven to 400 degrees. Grease an 8x8 pan.

Mix the wet ingredients. Add the dry ingredients and mix well. Pour into pan and bake 22-28 minutes till a toothpick inserted din the center comes out clean.

Time: 40 minutes  Serves: 9

This is my new favorite cornbread. The leftovers are moist days later! I love to reheat cornbread and put cold jam on top of it. Yummy! This recipe is from Nicole Hunn's Gluten-Free on a Shoestring.
