1.5 c shredded zucchini (with skin on)
1/2 GF baking mix or 1/2 c flour
1/4 c shredded parmesan cheese
2 T minced onions
2 T mayonaise
1/4 t oregano
Salt and pepper to taste
Put shredded zucchini between paper towels to remove moisture. Mix all ingredients well. Heat a skillet over medium heat with a little olive oil in it. Use 2-3 T of batter per pancake.Cook till golden and flip till cooked through. Serve with sour cream.
My aunt gave me this recipe. They are a great substitute for potatoes.
