Multigrain Buttermilk Blueberry Pancakes

1 2/3 c flour
1 T baking powder
1 t baking soda
1 t salt
1/3 c yellow cornmeal
1/3 c rolled oats
3 T sugar
1 1/2 c buttermilk
2 eggs
4 T unsalted butter, melted
2 - 3 T vegetable oil

Sift the flour, baking powder, baking soda and salt in a large bowl. Add cornmeal, oats and sugar and whisk to combine. Add the buttermilk, eggs and butter and mix. Fold in blueberries. Heat the oil on a skillet over medium heat. Ladle 1/2 c of batter per pancake. Flip when tops bubble. Serve warm.

Time: 30 minutes   Serves: 4-6

I can eat pancakes any time of day. This recipe is perfect for two when you half the recipe. The original recipe came from True Blueberry by Linda Dannenberg.
