3/4 c butter, softened
2 c sugar
1 (15 oz) can of pumpkin
1 1/2 t grated orange peel
3 1/2 c flour
2 t cinnamon
1 t salt
1 t baking soda
1/2 t baking powder
1 c chopped walnuts
1 c chopped cranberries (fresh or frozen)
Cream the butter and sugar. Add the eggs one at a time, beating well after each addition. Add the pumpkin and orange peel and mix well (mixture will look curdled). Combine the flour, cinnamon, salt, baking soda and baking powder and add to the pumpkin mixture, beating on low speed till moistened. Fold in the walnuts and cranberries. Pour into two greased 8" x 4" x 2" loaf pans.
Bake at 350 degrees for 65-75 minutes or till a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

This is my favorite bread. It is a great fall and winter bread, but I love it all year round. This bread also freezes well.
