12 oz small curd cottage cheese
1/4 c flour
1/2 t baking powder
2 T butter, melted plus 1 T butter
8 oz monterey jack or pepper jack cheese, shredded
1 small onion, chopped
1/2 green bell pepperr, chopped
1/2 red bell pepper, chopped
4 green onions, chopped (optional)
Preheat oven to 350 degrees. Spray a 10" pie pan with nonstick spray. In a large bowl, whisk together eggs, cottage cheese, flour, baking powder, 2 T melted butter and 1 c cheese.
Melt 1 T butter in a small skillet over medium-low heat. Add the onion and cook till slightly brown. Stir the onions into the egg mixture. Add the peppers and green onions and stir. Pour mixture into pan. Sprinkle with remaining cheese. Bake for 35 minutes till lightly browned. Let stand 5 to 10 minutes before serving.
