Greek Couscous Salad

1 (7 oz) package garlic and herb couscous 
3/4 cup cherry tomatoes, cut in half
1 (2 oz) can sliced olives, drained
1/2 c diced mixed bell peppers (red, yellow, orange)
1/2 cucumber, chopped
1 T dried parsley
6 oz package crumbled feta cheese
4 T Greek vinaigrette salad dressing (more if preferred)
Salt
Pepper

Cook couscous according to package directions. Place in a large serving bowl and cool. Break up clusters with a fork. When couscous has cooled add the vegetables, parsley and cheese. Add viniagrette and salt and pepper to taste.

Viniagrette:
1 c olive oil
1/3 c white wine vinegar
1/8 t garlic powder
1/8 t paprika
1/8 t salt
1/8 t pepper
1 pinch dried basil
1 pinch dried oregano
2 t Parmesan cheese
1/2 - 1 t sugar

Mix and refrigerate.

Time: 20 minutes   Serves: 8

I serve this salad when I make chicken souvlaki.
