Scalloped Potatoes and Ham - GF

2 lbs potatoes
3 T butter
1/4 c finely chopped onions
3 T flour or gluten free potato flour
1 t salt
1/4 t pepper
2 1/2 c milk
1 T butter
1 1/2 c diced ham

Preheat oven to 350 degrees. Grease a 2-qt dish. Peel and thinly slice potatoes. Heat 3 T butter in a saucepan over medium heat. Add onion and saute for 2 minutes. Add the flour, salt and pepper. Stir constantly till smooth and bubbly. Add milk and stir till the mixture boils. Boil and stir 1 minute.

Mix together the potatoes and ham and place in 2-qt dish. Pour the sauce over the potatoes and ham. Dot with 1 T butter. Cover and bake 30 minutes. Uncover and bake 60 to 70 minutes or till potatoes are tender. Let stand 10 minutes before serving.

Time: 2 hours   Serves: 6

This has been one of my favorite meals since I was a kid. It is a good way to use leftover ham.
