Cranberry Pecan Stuffing
1 c chopped celery
1/2 c chopped onion
1/4 c butter
1 t dried sage, crushed
1/2 t dried thyme
1/4 t pepper
6 cups stuffing cubes
1/2 c chopped pecans
1/2 c dried cranberries
1/2 c plus 1-2 T chicken broth
 
Melt the butter in a small saucepan and cook the celery and onion till tender. Remove from heat. Add the sage, thyme and pepper. Place the stuffing cubes in a mixing bowl. Add the celery mixture, pecans and cranberries. Add the 1/2 c chicken broth to moisten. If you prefer softer stuffing, add the additional 1-2 T of chicken broth. For additional moistness, cover and chill the stuffing for a few hours. Bake covered at 325 degrees for 30-45 minutes till heated through.

Time: 1 hour   Serves: 6-8
